I, too, like a story with my meal. Growing up in a family of story tellers, I learned to relish stories shared at mealtime. And, I especially appreciate when the storyteller tweaks a recipe to make it her own. I’m fascinated by the way certain ingredients can come together to create a delectable taste. While creating recipes is an art form for chefs, more often than not, it’s a happy accident for the rest of us. On occasion, we may actually create a new recipe out of an old one.
Years ago, our daughter came across a Bisquick recipe for Hamburger Pie, which she made according to the recipe. While it was okay, she wondered what if she substituted ground sausage for ground beef and turned it into a breakfast dish. The rest is history. It has become one of her signature dishes, one she often serves to guests for breakfast. The whole family loves it.
I frequently make it for Bob and me. So when our daughter planned a visit before COVID-19 changed our routines and I began to contemplate what to serve, my mind first went to her recipe. That didn’t seem fair. But since Bisquick is the secret ingredient in this crustless quiche, I checked on line for something different, but similar.
I found a whole list of ideas. I chose Ham and Swiss Cheese Pie. It was good, but when I make it again, I will salute onions and green peppers to add to it, sort of a western omelette ingredient. I will also add more cheese to top it. I do love when we can turn a basic recipe into our own.
One recipe that I haven’t tried yet was for BLT Pie. I plan to make it soon because a BLT is still my favorite sandwich.
Sausage Quiche
1 lb. bulk sausage, cooked and drained (can be cooked and refrigerated the day before)
1 cup shredded cheddar cheese (I top the quiche with the cheese rather than putting it in the pan on top of the sausage)
2 eggs
1 cup milk
1/2 cup Bisquick
Preheat oven to 400 degrees. Spray 9-inch pie pan. Place cooked sausage in bottom of pie pan. (Reheat sausage in microwave for a minute if cooked ahead of time.)
Top with the cheese
Mix Bisquick, eggs and milk together. Beat until smooth. Pour over sausage and cheese.
Bake 35-40 minutes until mixture is set. Let stand for five minutes before serving.
Ham and Swiss Pie
1-1/2 cups cubed fully cooked smoked boneless ham
1 cup (4 ounces) shredded Swiss cheese
1/4 cup chopped green onions (add chopped green peppers and saute the vegetables in the microwave before assembling).
1/2 cup Bisquick
2 eggs
1 cup milk
Preheat oven to 400 degrees. Spray 9-inch pie pan. Place ham in bottom of pan. Top with onions and cheese. Mix Bisquick, eggs and milk until smooth. Pour over mixture in pan. Bake 35-40 minutes until done. Let stand five minutes before serving.
Easy BLT Pie
12 slices bacon, crisply cooked, crumbled
1 cup (4 ounces) Swiss cheese
!/2 cup Bisquick
1/3 cup mayonnaise
3/4 cup milk
2 eggs
Preheat oven to 400 degrees. Spray 9-inch pie pan with cooking spray. Layer bacon and cheese in pan. Mix Bisquick, mayonnaise, milk, and eggs until smooth. Pour over bacon and cheese. Bake for 25-30 minutes until done. Let stand five minutes before serving.
Spread 2 tablespoons mayonnaise on top of cooked pie. Sprinkle with lettuce. Top with tomato slices.
